I didn't get here till '45 but Chevy was well established in my earliest memories though Dad was a MoPar guy.  ;D Here is a picture of a 153 ci Chevy four Valve cover from a '62 Chevy II. I think it was too short for Chevrolet to fit with the same size script. Later ones were plain, i suppose someone didn't get the humor.  :)

I wonder if it was changed because Chevrolet was being mispronounced or was it trying to fit into a more hip/beatnik culture that was  beginning.

I think the people changed it and the company wanted to capitalize on it. It was an endearing nickname becoming a "household" word. The best advertisement they could hope for. This song was first recorded in 1929, the first year of the Chevy Six. Both Chevrolet and Chevy are used in the song.
