I think all I should have between the frame and body is some rubber strips.
In the avatar of your car , appears to be a 30--32 chev coupe. There is people on ebay selling frame rubber sets for the 29--32 chev. Basically they are about 1/4" thick rubber with the hole for the body bolt.
Fords use a roll of webbing on the frame , sticky one side.
You can shim the body for the doors gaps on the #2 & #3 body bolts so your gaps are perfect and body lines line up.
Inside the doors is a 3/16 or 1/4" rod going from the top door glass bottom edge to the bottom corner. By tightening this rod with a turnbuckle in the middle you can pull in the bottom corner of the door so it aligns even with the quarter panel.
you just learn this stuff from the owners manual and the body repair book Gm produced and both are sold on ebay
